ust like good wine, the best olive oils are produced in limited quantities on small estates using varietal olives and, sometimes, blending them to achieve the richest flavour; these flavours vary from place to place and year to year. We have done the tasting for you and selected the finest of the crop. You will find oils ranging in style from light and fruity suitable for delicate foods to more assertive, grassy, leafy and  peppery often with bittersweet and almondy after taste.
