Each year Leonardi transfers their vinegar from barrel to barrel as it concentrates through evaporation and takes on the character of the wood. The 8 on the bottle indicates this has been performed 8 times and the vinegar has aged in 8 different barrels. Each transfer, or 'Travasi', occurs annually which means the youngest vinegar in the mix is 8 years old and the oldest could be of a much more advanced age.
