This traditionally-shaped Yanagiba is the most common style of knife for slicing sashimi (uncooked fish).  Featuring a single bevel for the most precise cuts and a very fine grain stainless steel for a perfectly smooth slice and easy care. The 10¼" version is the most common size for most fish.
