Dalmatian Sage, or "Salva officinalis," is a perennial evergreen with woody stems, grayish-green oblong leaves and blue to purplish flowers. It is native to the coastal Dalmatia region of Croatia where the combination of soil and climate promotes remarkably flavorful sage.

It has been cultivated for centuries for both medicinal and culinary uses, often being brewed into a tea to soothe sore throat and cough. It was also thought to help bring down fever and relieve joint pain and headaches.

Dalmatian Sage has an aromatic, savory, woodsy and herbaceous taste that is thought to be superior to the more common sage varieties.
